Avocado Toast with Poached Eggs and Furikake

Ingredients
  

Poached Eggs

  • 2 fresh eggs
  • 1 tbsp vinegar

Avocado Toast

  • 2 slices bread
  • olive oil
  • 1 whole avocado
  • 2 tsp lemon or lime juice
  • salt
  • black pepper
  • furikake

Instructions
 

Poached Eggs

  • Crack an egg into a small mesh sieve over a bowl. Wait until the liquidy egg whites have been removed. Then place the egg in a separate small bowl.
  • Bring a large pot of water to boil. Once boiling, turn the heat to medium-low and stir a tablespoon of vinegar into the water.
  • Drop the egg in the middle of the vortex and let it cook for 3 minutes. Then remove the egg with a spoon, dab dry to remove excess water and serve!

Avocado Toast

  • Toast the bread on a stovetop with olive oil to give it some extra flavor.
  • Take the avocado and mash it in a bowl with a fork. Add the lemon/lime juice, salt, and black pepper.
  • Then assemble the toast, avocado, poached eggs, and top with a little bit of pepper and the right amount of furikake.
  • Serve immediately and enjoy!
